Ingredients:
1 egg
1/2 c. vegetable oil
5 or 6 ripe bananas, mashed
1/2 c. sugar
1 tsp. vanilla
1 c. all purpose flour
1 c. quick cooking oats
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. ground cinnamon
1/3 c. chopped nuts
1/2 c. raisins
- Beat eggs, oil, bananas, sugar and vanilla in large bowl.
- Mix in flour, oats, baking soda, baking powder and cinnamon.
- Stir in nuts and raisins.
- Pour in greased and floured loaf pan and bake at 175 C for 45 to 55 minutes or until wooden pick inserted in center comes out clean.
- Cool 10 minutes and then remove from pan. Cool completely before slicing.
